1) I looked at it in the shop and the skinny tyres seemed slight incongruous with the mudguards, general feel of the bike etc. (I have a carbon frame racer for that stuff) Could I fit on some more grippy, sturdy winter tyres underneath the mudguards?
2)Will the slimmer steel main stem fit a baby seat? Such as the hamax siesta? Is this advisable?

the hamax siesta bracket will fit around a 28-40mm seat-tube so its fine on this bike.
