This rack uses a universal fitting so should fit just about all racks, so I would advise concentrating on finding a rack that will fit your bike.

The picture, poor though it is, seems to suggest these are made of a thin nylon material but Deuter are a quality manufacturer so I would be surprised if that were the case. Can anyone say what material they are made of or give an indication of the quality.

The pannier is of tough cordura-like nylon and the flat backing (with the clips, facing the wheel) is rubbery plastic. Not had them for long, but seems tough.

Yes it is each pannier. you can fit loads in them and should be good for a weeks worth of stuff.

They use a hook attachment which slots over most racks, they are a soft bag though and may not be the best choice for carrying a laptop. Bags such as the http://www.wiggle.co.uk/p/cycle/7/Altura_Urban_Dryline_17_Inch_Briefcase_Pannier/5360029305/ would be a better choice as they are designed to keep a laptop in place and have additional padding to help protect it.

No shoulder strap; only carry handles. They can be attached to each other via a thin strap though - you could put this over your shoulder (with one pannier against your chest and another against your back), but this would be uncomfortable if carrying any significant weight int he bags.

There is a carrying strap on the innerside of the bags, and it is not difficult to carry both the bags by holding both the straps together.

There isn't a strap, although you can put the panniers over your shoulder using the joining strap, one pannier over your front and one over the back.
I'm investigating using a holder type strap to attach to the hooks that clip to the rack, as I think that may work.
