I'm 6'5" which suggests XXL per the size guide, but I'm a 36" waist which suggests L. I'm thinking that XL may be the best one for me but I don't want the shorts to be baggy or loose, any suggestions?

I'd go for an XL for you. Because they are Lycra, they will hug your body a bit better, it's better to get the bibs and legs long enough for your body.

I think you will find the XXL baggy. I am 1.78m and pretty stocky with large thighs, and L is a good size for me. The shoulder straps seem quite stretchy so I suggest you go for the XL.

Cycle shorts are normally based around height rather than weight as the lycra will stretch to fit a larger frame but not a longer body.
I would probably go with the XL and if they don't fit wiggle had a great returns policy.

The lycra is a summer weight but still supportive (just over 200g I think), definitely not a "roubaix" type winter material. The pad is pretty decent too!

I would go for the M - although the shoulder straps have a good deal of stretch, I think the S might be a bit short. Personally, I would find tight shoulder straps more annoying/uncomfortable than a bit of room around the middle.

Personally, my instinct would be to go for the M as the last thing you want is a constricted saddle area (if you catch my drift). Alternatively, order both, try on and return the one you're least comfy in.

In a word, yes. I find the pad really comfy although I admit I've not done 100 miles in them just yet but on long sections of sat in the saddle, I don't have any dis-comfort at all and can focus on the ride.

100 mile is about the highest limit u can go on these bibs and only if u r an experienced cyclist thus u stand right on the saddle during the exercise.
For a novice with a few extra pounds I would suggest a heavier pad.
