it'll take a rack and the concealed gear cables at the 5700 105 shifters would allow you to mount a bag at the bar easily.

there is one spacer fitted IIRC.
i have no reason to think that you could not easily replace the unit with a regular stem ( but it does look pretty cool ).
there's a top bolt and a clamp bolt.
i'll check the instructions later.
