both a commuting and touring favourite, Ortleib pioneered hte fully water-tight seam-sealing process. The back roller Pluses use a lighter-weight Cordura finish, fully backed by a laminate, which is more eco-friendly and expensive than the heavier, arguably tougher PVC versions. The design is incredibly simple - they're easy to get into and straight-forward to shut - a lid version is also available. The mounts are very easy to adjust, requiring no tools and have loads of range for positioning. Although the feel is more plasticy than the mounting system used on the Classic range, we've not had any problems with durability.
Lightweight, high quality, fully watertight panniers - expensive.

This knowledge has swayed me towards the 'Plus' panniers of sho.
The tough rear pannier made of tear-resistant Cordura fabric is 100% waterproof thanks to its handy roll closure and free PVC. With its QL2 fixing it is quickly mounted and taken off the bike rack. the classic version is equipped with QL1.
So I think it's a more resistant product than the classic pair.
'Classic' have a smooth plasticy type surface making them easy to wipe clean.
'Plus' have a material surface so are softer.
'Plus' have an inner pocket with mesh zip compartment to store small flat items.

Pretty much anything will work.
To give an idea of size, look at the picture on this product description of the rolled up, full pannier. The stiffener takes the shape of the bottom part of the bag, up to about the Ortlieb logo. It is a couple of centimetres thick, and then you also have the fitting for the rack adding some more thickness.
For carry on luggage, you could manage to fit one inside the other, plus your passport, wallet, phone, some food etc. All the essentials anyway.
I'm not sure whether repeated folding or rolling damages the fabric, but I doubt it.
My panniers are still in apparently perfect condition (and still waterproof) after about 2 years of daily use. (just a bit dirty - I should clean them more often... )
